Cookie recipes <\/h3>\n

I posted my recipe for my raspberry and white chocolate cookies<\/a> and I just couldn’t resist making a Halloween version for my blog. I know the recipe is oh so similar, but c’monnnn… PUMPKIN SPICE COOKIES.<\/p>\n

Cookies have always been a super popular thing to post on this blog, and I’m happy about this because they are one of my favourite things to bake and eat as well. I just adore them. They are always simple to make – a one bowl mixture really, and then you whack them on the tray and bake. <\/p>\n

My New York City cookies<\/a> are by far one of the most popular recipes I have ever produced, and there are no signs of that changing any time soon. However, I love a theme… so as it’s the peak of autumn, I needed an autumnal cookie recipe – pumpkin spice cookies. <\/p>\n

Pumpkin Spice <\/h3>\n

After the success of my no-bake pumpkin spice cheesecake<\/a> and my pumpkin spice cupcakes<\/a> last year, I thought a cookie version for this year would be perfect.<\/p>\n

We’ve nearly all heard of pumpkin spice now right? Pumpkin spice for me is famous because of the Starbucks pumpkin spice latte. I will admit that I am much much more of a hot chocolate gal, but I have tried the PSLs and they aren’t half bad!<\/p>\n

Some other places also do pumpkin spice treats, even Baileys have a pumpkin spice version, so it’s definitely a flavour combination that has become very popular over the past couple of years. Some places I find pumpkin spice can be quite sweet, like Starbucks, and others its a lot more spicey.<\/p>\n

Homemade pumpkin spice mix<\/h3>\n

My homemade pumpkin spice mix is so easy, and the recipe can be found at the bottom of this page. It does make more than you need, but I honestly adore it so much I add it to everything at this time of year. <\/p>\n

Cinnamon, ginger, and nutmeg I use on regular occasions, so I only needed to buy the allspice and cloves. It’s a mix that you can whisk together, and then keep for ages. Use it in my other pumpkin spice recipes, or use it for other bits as well.<\/p>\n

Chocolate <\/h3>\n

These cookies are quite a delicious mix of both as you have the chewy gooey cookie, and then the white chocolate chips to add the sweetness. Of course, this recipe is only going to be SO pumpkin spice, as it’s just a spice mixture, not actually adding pumpkin. <\/p>\n

You can easily not use any chocolate chips in this at all if you don’t want to have any, however I adore the combination. I also add in some M&Ms and smarties and basically any coated chocolate that is orange and yellow themed, because I just wanted to. Yes, I do just pick these out of a multipack, so this is optional. <\/p>\n
