I just adore anything lemon flavoured as it&#8217;s so fresh, it&#8217;s never too much, and it always tastes 10\/10.&nbsp;<\/p>\n<p>Most recently I shared my <a href=\"https:\/\/www.janespatisserie.com\/2024\/04\/21\/lemon-curd-muffins\/\">lemon curd muffins<\/a> and my <a href=\"https:\/\/www.janespatisserie.com\/2024\/06\/09\/lemon-blueberry-tart\/\">lemon blueberry tart<\/a> and they have both been endlessly popular which makes me so happy, because I love them both just as much as you all do, it appears. Honestly, I can&#8217;t actually count how many traybake recipes I have actually published now because it really is just too many.&nbsp;<\/p>\n<p>One of my most popular bakes of the more recent years is my <a href=\"https:\/\/www.janespatisserie.com\/2022\/09\/23\/raspberry-crumble-bars\/\">raspberry crumble bars<\/a>, and after the success of these coupled with the success of the earlier mentioned lemon bakes, I wanted to merge them all together to create a bake that would be even more popular &#8211; the lemon crumble bars.&nbsp;<\/p>\n<p>I think traybakes are such an accessible bake for anyone of any skill level, and they always taste delicious. There is simplicity behind them, as well as a lot of depth of flavour and style as you can go anywhere on the scale from brownies, to cookie bars, to crumble bars.&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-31346\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars7-2-533x800.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars7-2-533x800.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars7-2-200x300.jpg 200w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars7-2-768x1152.jpg 768w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars7-2-1024x1536.jpg 1024w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars7-2.jpg 1365w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Crumble bars&nbsp;<\/h3>\n<p>So when it comes to these crumble bars, it is quite simple:<\/p>\n<ul>\n<li>Oats \u2013 for this bake, I wanted an oaty flavour to come through &#8211; I always recommend using rolled oats over porridge oats as they create a more consistent bake.<\/li>\n<li>Flour \u2013 an obvious one, but plain flour is a must! Self raising flour would create an odd texture&nbsp;<\/li>\n<li>Sugar \u2013 I decided to use light brown soft sugar, but this would work well with other sugars such as caster sugar, or even dark brown soft sugar.&nbsp;<\/li>\n<li>Raising agents \u2013 this one may sound a little odd, but trust me \u2013 you want the tiny lift from the baking powder (but not as much as self raising flour would produce)<\/li>\n<li>Butter \u2013 I use unsalted butter as always, but a salted butter would work well also. I wanted to make the filling as simple and delicious as possible, and also a filling that sets super well&nbsp;<\/p>\n<ul>\n<li>Condensed milk &#8211; I would say it&#8217;s important to use the full-fat and full-sugar version of the condensed milk so that the bake sets well&nbsp;<\/li>\n<li>Lemon Juice &#8211; I use fresh lemons so I use the juice of 3 medium\/large sized lemons. If your lemons are smaller, use four&nbsp;<\/li>\n<li>Lemon zest &#8211; Same as above, I use 3 medium\/large sized lemons, four smaller ones is best&nbsp;<\/li>\n<\/ul>\n<p>These three ingredients are mixed together in a bowl until combined &#8211; the texture make look a little weird at first, but the lemon juice and zest will eventually combine with the condensed milk and make a thickened substance.&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-31342\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars3-2-533x800.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars3-2-533x800.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars3-2-200x300.jpg 200w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars3-2-768x1152.jpg 768w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars3-2-1024x1536.jpg 1024w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/08\/LemonCrumbleBars3-2.jpg 1365w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Assembly<\/h3>\n<p>These lemon crumble bars are super easy to put together. I start by rubbing together the crumble mixture with my fingers in a large bowl until it resembles a slightly wet sand like breadcrumb texture. I don&#8217;t use a food processor for this as you don&#8217;t want to lose the texture of the oats.&nbsp;<\/p>\n<p>You tip 500g of this mixture into the base of your lined <a href=\"https:\/\/amzn.to\/3l0unEi\">9&#215;9&#8243; square tin<\/a> and press down nice and firmly. After this you pour the lemon mixture on top and then sprinkle on the rest of the oat mixture and bake. It turns nice and golden in the oven and then after baking and cooling, the lemon mixture has set perfectly.&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\"
