They are probably one of my favourite things that I have ever made, and I just can&#8217;t stop making them.&nbsp;<\/p>\n<p>They were so highly requested that I hope you love them too. A lot of the time there is a kick of booze as well, or even chocolate shavings.&nbsp;<\/p>\n<p>I adore the flavour of anything black forest these days, after having the best Black Forest gateau ever in Switzerland many many years ago, and I just love it. Sometimes, I refer it to quite a festive flavour, but black forest is lovely all year around for me.&nbsp;<\/p>\n<p>My <a href=\"https:\/\/www.janespatisserie.com\/2019\/12\/14\/black-forest-loaf-cake\/\">Black Forest loaf cake<\/a> is one of my favourites, along with my <a href=\"https:\/\/www.janespatisserie.com\/2020\/07\/11\/no-churn-black-forest-ice-cream\/\">Black Forest ice cream<\/a>&#8230; but these cookies?! You can use all of one, or the other though.<\/li>\n<li><em><strong>Egg<\/strong><\/em> \u2013 I tend to use medium eggs in my bakes, but you can use one large egg instead of in this cookie recipe<\/li>\n<li><em><strong>Vanilla<\/strong><\/em> \u2013 Optional, but adds a delicious flavour.&nbsp;<\/li>\n<li><em><strong>Flour<\/strong><\/em> \u2013 Always use plain flour in your cookies, especially these!!&nbsp;<\/li>\n<li><em><strong>Raising agents<\/strong><\/em> \u2013 For these, I use bicarbonate of soda and baking powder, but only a little bit<\/li>\n<li><em><strong>Salt<\/strong><\/em> \u2013 I always add sea salt to my cookies because it\u2019s delicious, but you can definitely leave it out, or use salted butter<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-30059\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/01\/BlackForestCookie12-2-533x800.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/01\/BlackForestCookie12-2-533x800.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/01\/BlackForestCookie12-2-200x300.jpg 200w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/01\/BlackForestCookie12-2-768x1152.jpg 768w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/01\/BlackForestCookie12-2-1024x1536.jpg 1024w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2024\/01\/BlackForestCookie12-2.jpg 1365w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Chocolate<\/h3>\n<p>So for me, the main part of this recipe really (and I guess Black Forest in general) is getting the chocolate right. I often believe it should always be a dark chocolate flavour, so I used dark chocolate chips in these cookies.<\/p>\n<p>However, as these are just cookies, you can just use whatever chocolate chips you like, such as milk, white or even a mixture. It sort of goes against the idea of most cookies where I often say don&#8217;t add a wetter ingredient (fresh fruit being one of those), but it does just work.&nbsp;<\/p>\n<p>The cherries do create a wetter and stickier cookie dough, but it does still work, I promise. I find it easy, but also it&#8217;s because I&#8217;m lazy. I use a Flexi edge beater or the beater attachment, I definitely do not use the whisk as all the ingredients would get stuck. If you&#8217;re going to make the dough by hand, just add the dry ingredients in sections so you can mix it in easier.&nbsp;<\/p>\n<p>Once the main cookie dough is mixed together, I pour in the chocolate chips and chopped and pitted cherries and mix in briefly. Like mentioned above, this makes the dough slightly stickier than normal, but then I use a cookie scoop to dollop the dough onto the lined trays.&nbsp;<\/p>\n<p>I only put four-five cookies per LARGE tray, so that they have room to spread. If baking from raw, add 1-2 minutes baking time&nbsp;<\/li>\n<li>You can make the cookies smaller (bake time is about 9 minutes)&nbsp;<\/li>\n<li>I use a rich <a I make 10 cookies all together.\u00a0<\/span><\/div><\/li><li id=\"wprm-recipe-30063-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Place the cookie dough in the freezer for at least 30 minutes, or in the fridge for an hour or so!\u00a0<\/span><\/div><\/li><li id=\"wprm-recipe-30063-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Whilst the cookie dough is chilling, preheat the oven to 200\u00bac\/180\u00bafan<\/span><\/div><\/li><li id=\"wprm-recipe-30063-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Take the cookies out of the freezer\/fridge and bake the cookies in the oven for 11-12 minutes.<\/span><\/div><\/li><li id=\"wprm-recipe-30063-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once baked, leave them to cool on the tray for at least 30 minutes, as they will continue to bake whilst cooling!<\/span><\/div><\/li><\/ul><\/div><\/div>\n\t<div id=\"recipe-video\"><\/div>\n\t<div id=\"recipe-30063-notes\" class=\"wprm-recipe-notes-container wprm-block-text-light\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-normal wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><ul>\n<li>I use <a href=\"https:\/\/amzn.to\/3vyr7KQ\">this cookie scoop<\/a> to portion my cookies<\/li>\n<li>I use fresh cherries for these, but dried cherries work really well if you're worried about the fresh ones or can't find them.\u00a0<\/li>\n<li>These cookies last for 4-5+ days once baked<\/li>\n<li>These cookies freeze well for 3+ months, raw or baked.
