Easy and delicious cakes in the viral mini loaf tins – so easy to make and such a cute baking idea!<\/h2>\n

Mini loaf tins<\/h3>\n

So these tins have gone viral in the baking world, and I just can\u2019t keep up with them\u2026 honestly, they are everywhere! Like the bronuts, I thought it was about time that I gave them a go to give the rest of you a chance to try them as well.<\/p>\n

I, obviously, didn\u2019t invent this idea but they are so fun and I really wanted to give them a go as much as possible. They look cute, they\u2019re great for mini gifts and you can have so much fun.<\/p>\n

There are a variety of them to buy online, but these are the exact ones I used for the bakes in the photos – but here is another set that I tried as well when testing out recipes.<\/p>\n

I do re-use my tins after they have had a bake in them – I wash them out and use again or use them for storage or sprinkles, piping tips, etc – try not to throw them away after one use! <\/p>\n

Cake recipes<\/h3>\n

For the main recipe for this post, I went for a vanilla cake as I wanted to show the basics of a cake sponge, and how much it takes to fill a certain amount of mini cake tins.<\/p>\n

For 12 mini cake tins I used a 5 egg recipe with 275g butter, sugar, self raising flour, 5 eggs and 1 tsp vanilla extract mixed together and split between the 12 mini tins. I found putting 80-85g of cake mix was ideal for these tins.<\/p>\n

When baking these you don\u2019t want to overfill them as you need to be able to fit the decoration on top of the cake and under the lid of the case so the 80-85g is perfect. Some little tins may vary, but this has worked well so far.<\/p>\n

I also made some using my chocolate fudge cupcake recipe and found the batch of 12 cupcakes made 8 mini cake tins perfectly – so this may help if you want to convert a cupcake recipe to these tins.<\/p>\n

Cheesecake Recipes<\/h3>\n

The good thing about all of these mini cake tins is that you can basically put whatever you want in them as they are oven safe, but also they can be used for delicious things such as cheesecakes.<\/p>\n

I decided to try out my no-bake Rolo cheesecake in the tins, and using half of the cheesecake recipe made 6 Rolo cheesecakes and it was perfect. I split the biscuit base between the 6 mini tins, and then piped the cheesecake mixture on top.<\/p>\n

I put the Rolos on top of the cheesecake mix, instead of mixing into the cheesecake mix as I nearly forgot to put them in, but after they\u2019d set I decorate with some swirls of sweetened cream and extra Rolos like always, and they looked great.<\/p>\n

Traybake Recipes<\/h3>\n

Another delicious example I tried was brownies – I tried my triple chocolate brownie recipe and oh wow they were absolutely delicious. They baked so well into the tray, and then I decorated with a drizzle of some extra chocolate and some decoration.<\/p>\n

I found that half of the brownie recipe made six brownies, so the full brownie recipe would make 10-12. You can afford to fill the brownie tins slightly more as they don\u2019t rise much, and the decoration is a lot less compared to a cake.<\/p>\n

Decoration<\/h3>\n

I used a standard decoration of an American buttercream frosting, because it\u2019s so easy to make and again these are based on a basic vanilla cake\/cupcake recipe. You can of course decorate them with whatever you fancy.<\/p>\n

I used my favourite 2d closed star piping tip to decorate all of these beautiful mini cake tin bakes, but it worked well. I did some swirls, some stars, and decorated with a variety of sprinkles and it worked wonders.<\/p>\n
