When it comes to the festive season I have always loved the sweet stuff… obviously! I can’t count how many festive recipes are on my blog right now – but when it comes to the savoury side of things?! Oh my. <\/p>\n

These brie & bacon bites are little bundles of absolute heaven and I am here for it. <\/p>\n

Festive food<\/h3>\n

I tend to find that all the snacks on offer are just getting better and better with each year. The supermarkets smash it when it comes to the canap\u00e9 and sides of the festive season, and to be honest I buy SO many of them. <\/p>\n

However, there are certain traditional festive treats for me, and that includes these bad boys. Brie, bacon, cranberry, filo pastry and more make the best bitesize treats on the market. Also, they are SO easy to make at home. <\/p>\n

These make the perfect little pre-dinner snack, or something for the end of the day after the big roast dinner – they are just so scrumptious. <\/p>\n

Cheese<\/h3>\n

So, obviously, the cheese in use here is brie. Brie with bacon and cranberry is a panini classic at basically all cafes – and the combination is hard to fight against. <\/p>\n

When it comes to the brie cheese itself, you can use whatever you prefer. A cheap brie, an expensive brie – or even a different cheese altogether. I find brie is an easier cheese to chop up (albeit a bit soft) but it melts wonderfully, and it’s fairly inexpensive. <\/p>\n

You can use mozzarella, camembert, goats cheese, or whatever your taste prefers. I just cut the bits of brie into small cubes so that they can fit into the bitesize treats. <\/p>\n

Bacon<\/h3>\n

Now, when it comes to the bacon, it’s hard to get it wrong. Bacon is bacon at the end of the day. I do tend to use lardons that are small (as some are massive?!) but you can 100% just get some back bacon and chop it up, or even streaky bacon. <\/p>\n

I don’t cook the bacon before using as the pieces and bites are so small the bacon cooks well in the oven, but if you want them super crispy you can cook them before. <\/p>\n

If you are vegetarian, or just don’t fancy the bacon, you can increase the amount of cheese, or use an alternative. A nice added texture if you remove the bacon is to add some chopped nuts such as walnuts to the bites instead. <\/p>\n

Flavours<\/h3>\n

For the added flavours to the brie and bacon, I use cranberry sauce. It’s classic, it works wonders with both brie and bacon, and it’s a truly festive delight. I also add a little wholegrain mustard to the base of my bites because I think it brings it all up a level, but thats optional. <\/p>\n

Salt and pepper are good for seasoning if you want it, but you may not as the cheese and bacon can be quite salty already – or you can even add in some extra flavours if you preferred. <\/p>\n

Baking<\/h3>\n

Yes, yes I did use shop bought filo pastry. I am not in the mood to make my own filo pastry when I am prepping all sorts of other treats in my kitchen – and it’s so easy to buy. <\/p>\n

If you haven’t worked with filo before, it’s a super thin and delicate pastry, but it’s wonderfully light and delicious. I use scissors to cut up my strips of pastry, and then cut them all into squares. I’d say the squares of pastry are about 2″, and you need 2-3 pieces per bite. <\/p>\n

I used 3 pieces as I love the pastry, but two works well. You use a little melted butter to stick them together and then press into your mini tart tin<\/a>. I then split the filling between them all – there’s no real rule about this other than trying to get the filling even between them! <\/p>\n

Bake them in the preheated oven, and then cool slightly before eating and enjoy. <\/p>\n

Tips & Tricks<\/h3>\n

These are a little fiddly, but they are 100% worth it! I made 24 bites out of my mini tart tin<\/a> so if your tin is slightly different, you may get a different number of bites. <\/p>\n

These are best served fresh, but can be reheated in the oven if needed by preheating an oven to 180\u00bac and baking for 5-10 minutes. These can be prepped in advance and kept in the fridge until they are baked later on in the day or they can freeze once baked for 3+ months. <\/p>\n
