I am obsessed with all things red velvet, and after so many requests for this beauty it was finally time to post it!!&nbsp;<\/p>\n<h3>Red Velvet Recipes<\/h3>\n<p>There is just something about red velvet themed bakes that really captures everyone and makes everyone bake them. I have quite a few on my blog now and in my books, such as my <a href=\"https:\/\/www.janespatisserie.com\/2020\/05\/23\/nyc-red-velvet-cookies\/\">red velvet NYC cookies<\/a>, my <a href=\"https:\/\/www.janespatisserie.com\/2015\/11\/03\/red-velvet-cake-with-cream-cheese-frosting\/\">red velvet cake<\/a>, and of course my<a href=\"https:\/\/www.janespatisserie.com\/2019\/10\/12\/red-velvet-brownies\/\"> red velvet brownies<\/a>.&nbsp;<\/p>\n<p>I just love the flavour it brings, as it is quite different. There are hints of vanilla, hints of chocolate, and its own unique flavour all tied into one. And this bake?! I found it easier to do four layers because I tend to bake these cakes into two sponges, and then split them each into two again.&nbsp;<\/p>\n<p><a href=\"https:\/\/amzn.to\/34JaXgF\">These are the cake tins I use<\/a> for sponges like this. I find if you use <a href=\"https:\/\/amzn.to\/34JaXgF\">deeper cake tins<\/a>, you get better results. If you try and do a deep cake in a tin that is too shallow, it tends to peak in the middle a lot more.&nbsp;<\/p>\n<p>I also tend to bake cakes like this at a lower temperature, for longer. This also creates a flatter top and prevents the peak in the middle. I am not trying to sell a lie or anything of the sort &#8211; a lot of colours are just not good enough to make the cake actually red.&nbsp;<\/p>\n<p>I use <a href=\"https:\/\/www.amazon.co.uk\/Sugarflair-Maximum-Concentrated-Paste-Extra\/dp\/B007VHFK8C?crid=3LEXAA6CVCIXI&amp;dchild=1&amp;keywords=sugarflair+red+extra&amp;qid=1623327189&amp;sprefix=sugar+flair,aps,213&amp;sr=8-5&amp;linkCode=sl1&amp;tag=janespati04-21&amp;linkId=5369133d2ec1158aa247db541c19a4ff&amp;language=en_GB&amp;ref_=as_li_ss_tl\">this extra strong red food colouring<\/a> all of the time, as it really is the best. Unfortunately, sorry to break it to you, supermarket own colours do not work. Mine is pretty amazing.&nbsp;<\/p>\n<p>For the outside though, I stuck to a basic vanilla buttercream. This is partly because I wanted something that could easily smooth and be dripped onto. I know it seems a bit boujee to make two different frostings, but if you don&#8217;t fancy it, you can just use all vanilla buttercream to be safe.&nbsp;<\/p>\n<p>It&#8217;s so important when making both the vanilla buttercream and the cream cheese frosting to use block unsalted butter, as any form of spread will not work. You want to have a smooth layer of frosting in between each layer of sponge, and then a crumb coat to seal in any of those crumbs. It&#8217;s so important to chill the cake between stages as well.&nbsp;<\/p>\n<p>The frosting on the outside is smoothed around to create a perfect surface, and I find using a<a href=\"https:\/\/www.amazon.co.uk\/Scraper-Measuring-Smoother-Buttercream-Polisher\/dp\/B07XLP3JPY?dchild=1&amp;keywords=large+metal+scraper&amp;qid=1623327606&amp;sr=8-12&amp;linkCode=sl1&amp;tag=janespati04-21&amp;linkId=cc18f25360b3e05b27d65d2fe22685de&amp;language=en_GB&amp;ref_=as_li_ss_tl\"> large metal scraper<\/a> and <a href=\"https:\/\/www.amazon.co.uk\/PME-Icing-Turntable-80-23\/dp\/B001TDZZ48\/ref=as_li_ss_tl?keywords=cake%2Bdecorating%2Bturntable&amp;qid=1584096529&amp;sr=8-50&amp;swrs=E04C860068D3CEC0851F980D9657FECE&amp;linkCode=sl1&amp;tag=janespati04-21&amp;linkId=15661ef09a2b1772ee7e9e20d4c04f70&amp;language=en_GB&amp;th=1\">a turntable<\/a> the best way to achieve this. If you don&#8217;t have either, you can still make a pretty and beautiful cake, but it may not be perfect.&nbsp;<\/p>\n<p>I used a white chocolate ganache drip, coloured red, to create my drip because I wanted to throw the theme of red velvet into everyone&#8217;s faces.
