I started my cookie pie journey with my <a href=\"https:\/\/www.janespatisserie.com\/2021\/05\/08\/kinder-cookie-pie\/\">kinder cookie pie<\/a> and wow okay yeah you guys love them just as much as I do.&nbsp;<\/p>\n<p>I was frustrated with the idea that I could see so many places selling these insane looking cookie pies, but I couldn&#8217;t find a recipe?! Plenty of testing later merging different recipes of mine to create it and YAY! Success.&nbsp;<\/p>\n<p>Yes, cookie pies are a little over the top and indulgent &#8211; but they are not something you are going to bake every day of the week. If you therefore want to make this with a plain\/vanilla cookie dough then follow one of those recipes.&nbsp;<\/p>\n<p>The cookie doughs are similar to <a href=\"https:\/\/www.janespatisserie.com\/?s=cookie+bar&amp;post_type=post\">my cookie bar recipes<\/a>, just increased in size and weights to make sure there is actually enough cookie dough for the base, sides and top. I do find plain cookies a little boring if there is nothing going on, so this cookie dough has some chocolate chunks\/chips\/bits and bobs. I find it best when making a cookie pie to not use large chunks of chocolate as you don&#8217;t want to risk the chocolate melting and then creating a gap in the dough.&nbsp;<\/p>\n<p>I used bars of milk chocolate and white chocolate to finely chop, and then used this. I didn&#8217;t use my normal chocolate chips because even that I was worried about. The idea is the same in my <a href=\"https:\/\/www.janespatisserie.com\/2020\/04\/01\/creme-egg-stuffed-cookies\/\">Creme Egg cookies<\/a> &#8211; you don&#8217;t want any seepage!&nbsp;<\/p>\n<p>If however you did want to not have any chocolate bits throughout, that is fine. Why should it?! I am in love and I don&#8217;t care who knows it!&nbsp;<\/p>\n<p>As these cookie pies are large in size, you do need to use a lot of spread to get it like mine. <a href=\"https:\/\/amzn.to\/3aUJr7c\">750g worth of spread<\/a> to be precise&#8230; Yeah I know, loads. But it really is worth it. Then, I cover the top with the final third of cookie dough. This then gets set in the freezer again for an hour before baking.&nbsp;I found the chilling technique meant it baked better (especially if your cookie dough was too soft!).&nbsp;<\/p>\n<p>If you find your oven is a tad temperamental its best to lower the temp slightly and bake for longer but you are looking for a deep golden! Once baked, you leave it on the side STILL IN THE TIN until it has cooled for at least an hour. As I use <a href=\"https:\/\/amzn.to\/2GpUwxC\">the loose bottomed<\/a> tin as its easy to take it out, but you want it to be cold still. I then portion with a large sharp knife as you don&#8217;t want it to break up as you portion it.&nbsp;<\/p>\n<p>You can buy giant tubs of <a href=\"https:\/\/amzn.to\/3aUJr7c\">Biscoff Spread<\/a> to decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add in the egg, egg yolk, and vanilla extract and beat again.<\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add in the plain flour, cocoa powder, bicarbonate of soda, and salt and beat until a thick cookie dough is formed!<\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add in the chopped chocolates and beat the cookie dough again until distributed well!<\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Split the cookie dough into three equal portions (about 475g each).<\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Line the bottom of a 8&quot; springform cake tin (at least 2.75&quot; in depth). <\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Press the first third of cookie dough onto the bottom of the cake tin.<\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Press the second third of cookie dough around the sides of the cake tin evenly. <\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Melt the biscoff spread for 20 seconds in the microave to loosen slightly or mix in a bowl briefly to loosen. Pour half into the cake tin inside the cookie dough case!<\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add on the chopped biscuits <\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Pour on the rest of the Biscoff Spread. <\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-11\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Freeze the pie at this stage for an hour. <\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-12\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once frozen, cover the top of the pie with the final third of cookie dough, making sure to seal it well! <\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-13\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Freeze the pie for another hour whilst you preheat the oven to 200\u00b0c for a regular oven, or 180\u00b0c for a fan oven like me. <\/span><\/div><\/li><li id=\"wprm-recipe-23831-step-0-14\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once chilled and the oven preheated, bake the pie for 30 minutes until the pie is lovely and golden on top.
