You have my idea of heaven.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I always look for new recipe ideas online, from my followers and even just my friends and family &#8211; if you are craving something that I haven\u2019t done yet, LET ME KNOW! I am more than happy to add it to my to-do list. For this beauty, my assistant Steph suggested it, and my lord\u2026 She was right.&nbsp;&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-21828\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/05\/CheesecakeLoafCake1.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/05\/CheesecakeLoafCake1.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/05\/CheesecakeLoafCake1-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h2>The sponge<\/h2>\n<p><span style=\"font-weight: 400;\">To make sure that this cake was absolutely delicious, I decided to use a similar sponge recipe to my <a href=\"https:\/\/www.janespatisserie.com\/2021\/02\/24\/mini-egg-loaf-cake\/\">mini egg loaf cake<\/a> because the oil sponge is just so good! Often people can say that chocolate cake can be dry (this just means it is overbaked) &#8211; but if you use an oil sponge, it\u2019s much easier to stay moist!&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A mixture of the following ingredients makes the most wonderful cake ever, and I am absolutely here for it. It\u2019s so easy to make where you don\u2019t have butter as well &#8211; you can literally just use a big bowl and a spatula:<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\"><strong>Self-raising flour<\/strong> &#8211; if you don&#8217;t have any, you can make some using two-level tsp of baking powder per 150g of plain flour, whisked in before using!&nbsp;<\/span><\/li>\n<li><span style=\"font-weight: 400;\"><strong>Cocoa powder<\/strong> &#8211; I find it best to use the strongest cocoa powder you can find for the best flavour &#8211; I use <a href=\"https:\/\/amzn.to\/30HyDDP\">this one<\/a> which is 100%&nbsp;<\/span><\/li>\n<li><span style=\"font-weight: 400;\"><strong>Light brown soft sugar<\/strong> &#8211; if you can&#8217;t find it, or want to use something else &#8211; caster sugar works well! Or even golden caster, or dark brown soft sugar.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"><strong>Eggs<\/strong> &#8211; I always use medium eggs in my baking these days!&nbsp;<\/span><\/li>\n<li><span style=\"font-weight: 400;\"><strong>Vegetable oil<\/strong> &#8211; this can be switched to sunflower oil if you need it &#8211; I&#8217;d avoid oils with flavour such as olive oil though.&nbsp;<\/span><\/li>\n<li><span style=\"font-weight: 400;\"><strong>Milk<\/strong> &#8211; PLEASE use whole milk &#8211; the full-fat nature is what you need!&nbsp;<\/span><\/li>\n<\/ul>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-21839\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/05\/CheesecakeLoafCake13.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/05\/CheesecakeLoafCake13.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/05\/CheesecakeLoafCake13-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-21834 aligncenter\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/05\/CheesecakeLoafCake8.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/05\/CheesecakeLoafCake8.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/05\/CheesecakeLoafCake8-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h2>The tin<\/h2>\n<p><span style=\"font-weight: 400;\">I use <a href=\"https:\/\/amzn.to\/3igd9Bd\">this 2lb loaf tin<\/a> in all of my loaf cake bakes and it works wonders &#8211; annoyingly though, some loaf tins (even though they say 2lb\/900g!) are slightly varied in size. The fact that I can put one inside another in my cupboard shows they aren\u2019t the same size (As same size tins can\u2019t stack well!).&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">If you are worried about it, you just need to make sure <a href=\"https:\/\/amzn.to\/3igd9Bd\">the tin<\/a> is max \u2154 full for a cake that has a raising agent like this (the self-raising flour). It is not a no-bake cheesecake mixture that has to be super thick so do not worry.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">If you beat the cream cheese on its own at first so that it\u2019s loosened, it will prevent lumps. Add the caster sugar and <a href=\"https:\/\/www.amazon.co.uk\/Nielsen-Massey-Pure-Vanilla-Extract\/dp\/B00LA0VZN0?keywords=nielsen+massey+vanilla+extract&amp;qid=1646311929&amp;sprefix=nielsen+,aps,136&amp;sr=8-8&amp;linkCode=sl1&amp;tag=janespati04-21&amp;linkId=339e19c5766689e0d11366dfc80004ee&amp;language=en_GB&amp;ref_=as_li_ss_tl\">vanilla<\/a> and beat again, and finally add in the egg yolk. I then pour \u2154 of the cake mixture into the tin, pour on the cheesecake mix, and then the rest of the cake mix.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I don\u2019t really swirl this mixture much as I prefer a chunk of the cheesecake mixture in the middle, and simply pouring in the mixtures in layers causes it to swirl somewhat anyway. A skewer test is hard because the cheesecake mixture will likely leave a residue.&nbsp;<\/span><\/p>\n<p>I find it best to leave the cheesecake loaf cake to cool fully in the tin because you want the cheesecake itself to set fully before having to get the sponge out of the tin. Then, you can easily make the frosting which is a simple chocolate buttercream frosting.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">You can of course just use a chocolate drizzle, or a different icing such as cream cheese frosting, or no decoration at all as this cake does easily handle itself &#8211; but that is up to you.
