I wanted to combine this to make a dessert for Easter that was not a cake&#8230; so here is my Easter Pavlova!&nbsp;<\/p>\n<p>I have put several meringue related recipes on to my blog now, and I just love them. They always look good, and generally are a crowd pleaser. My <a href=\"https:\/\/www.janespatisserie.com\/2016\/04\/01\/spring-pavlova\/\">spring pavlova<\/a> and my <a href=\"https:\/\/www.janespatisserie.com\/2016\/11\/28\/pavlova-wreath\/\">pavlova Christmas wreath<\/a> always go down well, along with my <a href=\"https:\/\/www.janespatisserie.com\/2021\/03\/13\/easter-meringues\/\">mini easter meringues<\/a> from last year &#8211; but I wanted something new that combined them all!&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-20570\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova1-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova1-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova1-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-20580\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova12-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova12-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova12-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Meringue<\/h3>\n<p>I love the look of the wreath, so even though it&#8217;s not Christmas any more, it&#8217;s just a nice way of displaying a pavlova in my opinion. I used the same meringue mixture with the egg whites, caster sugar, and a little white wine vinegar and cornflour to make the meringue (you can also add vanilla to flavour it here if you wanted).&nbsp;<\/p>\n<p>When you make the meringue mixture you want to make sure that the equipment you are using is spotlessly clean so that you don&#8217;t accidentally kill your meringue mixture. Even the tiniest bit of grease or something can kill a meringue, so make sure the bowl and whisk are clean &#8211; you can wipe it down with a bit of lemon juice to make this happen as well!&nbsp;<\/p>\n<p>This meringue is meant to be crisp on the outside, soft in the centre like marshmallow and absolutely delightfully light and delicious.&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-20571\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova2-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova2-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova2-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-20579\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova11-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova11-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova11-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Meringue ingredients&nbsp;<\/h3>\n<p>I used cartoned egg whites because I find it easier, but if you separate your eggs like normal, you need to make sure that the egg shell doesn&#8217;t go into the egg whites, or even a bit of yolk. I tend to separate my eggs into a smaller bowl, and then add into the large bowl to make sure there is no contamination.&nbsp;<\/p>\n<p><a href=\"https:\/\/amzn.to\/3nyb9rh\">I use my stand mixer<\/a> when I make meringue because I am a little bit lazy, but also it&#8217;s just so easy. You add the egg whites and whisk them to stiff peaks, and then start adding in the caster sugar slowly. I use a teaspoon to make sure it&#8217;s whisking in well, but you just let it whisk and do its thing whilst it goes.&nbsp;<\/p>\n<p>The white wine vinegar and cornflour is optional, but I prefer it. It changes the texture of the meringue and makes it wonderfully marshmallow like in the middle, but still crunchy on the outside &#8211; and the <a href=\"https:\/\/www.amazon.co.uk\/Nielsen-Massey-Pure-Vanilla-Extract\/dp\/B00LA0VZN0?keywords=nielsen+massey+vanilla+extract&amp;qid=1646311929&amp;sprefix=nielsen+,aps,136&amp;sr=8-8&amp;linkCode=sl1&amp;tag=janespati04-21&amp;linkId=339e19c5766689e0d11366dfc80004ee&amp;language=en_GB&amp;ref_=as_li_ss_tl\">vanilla<\/a> is optional too. It&#8217;s also a good way to practice piping skills because it doesn&#8217;t matter if it looks a little weird!&nbsp;<\/p>\n<p>I used my favourite <a href=\"https:\/\/www.icedjemsshop.com\/shop\/2d-piping-tip\/?ref=13\">2d closed star piping tip<\/a> to do this because it&#8217;s just the best ever and no-one can make me change my mind &#8211; but on a <a href=\"https:\/\/www.amazon.co.uk\/Tala-Performance-10A10673-Baking-Sheet\/dp\/B015R6V7JO\/ref=as_li_ss_tl?crid=H6M6BP4KOPHS&amp;dchild=1&amp;keywords=large+baking+tray+non+stick+40cm&amp;qid=1608111432&amp;sprefix=large+baking+tray,aps,204&amp;sr=8-9&amp;linkCode=sl1&amp;tag=janespati04-21&amp;linkId=da89c854923c31f394c6c7be21095ffe&amp;language=en_GB\">LARGE lined tray<\/a> (with the <a href=\"https:\/\/www.amazon.co.uk\/Bacofoil-Non-Stick-Textured-Surface-Versatile\/dp\/B073QRZLHX\/ref=as_li_ss_tl?crid=27WEFJYM7B24R&amp;dchild=1&amp;keywords=bacofoil+non+stick+baking+paper&amp;qid=1608291028&amp;sprefix=bacofoil+,aps,219&amp;sr=8-5&amp;linkCode=sl1&amp;tag=janespati04-21&amp;linkId=aef6a9669604b036f41ad87bf9dfbdab&amp;language=en_GB\">parchment paper<\/a> stuck down with a little meringue) I just followed a circle pattern and piped away.&nbsp;<\/p>\n<p>However, you can of course just dollop the meringue onto to the tray and roll with it like other pavlovas (my <a href=\"https:\/\/www.janespatisserie.com\/2016\/11\/28\/pavlova-wreath\/\">christmas pavlova wreath<\/a> does this) and both methods work very well.&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-20574\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova5-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova5-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova5-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-20577\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova9-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova9-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2022\/03\/EasterPavlova9-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Baking meringue<\/h3>\n<p>Meringues are baked at a lower temperature than most things, because you want to cook the egg white, but not over bake the meringue at the same time. I bake mine at 130\u00bac in my fan oven, but if you find yours browns your meringue you can lower the temperature next time.&nbsp;<\/p>\n<p>Sometimes meringues\/pavlovas can crack, but at the end of the day though, some cracks in a pavlova is not the end of the world so please don&#8217;t worry too much. It&#8217;s a classic part of meringue. And you have to make sure to let it cool and not rush it. Once the meringue is baked and cooled, you can just have fun &#8211; the whipped cream is easy&#8230; whip together double cream and a little icing sugar to soft peaks and dollop all over the meringue!&nbsp;<\/p>\n<p>I used a mixed of any easter chocolates I had (I tend to make a giant mixed tub up at the beginning of my easter baking and use as I go), and then I used some fresh berries because it&#8217;s always a good mix with cream and meringue, and it also looks super pretty for the showstopping dessert.&nbsp;<\/p>\n<p>It&#8217;s so easy, it&#8217;s so good.
