Mint chocolate being one of my favourite things in the world, here is my chocolate peppermint cake!&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I decided straight from the beginning of this recipe to swap things up slightly &#8211; I am aware that this looks oh so similar to a lot of my other layer cakes as they have a similar decoration design &#8211; but this beauty is a 6\u201d cake!&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-19493\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/PeppermintCake2-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/PeppermintCake2-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/PeppermintCake2-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Cake<\/h3>\n<p><span style=\"font-weight: 400;\">I wanted to do a smaller cake as I nearly always do 8\u201d cakes (by far the most common cake to bake in my opinion), but I understand sometimes smaller is better. Also, I think the smaller cake looks really cute! The smaller diameter, but still four layers, naturally makes the cake look taller.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I wanted to do a basic chocolate sponge for this cake, but jazz it up slightly with peppermint flavour. I couldn\u2019t find my cake leveler so I eyeballed it\u2026 and yeah, not my best work. I made two \u2018deeper\u2019 <a href=\"https:\/\/amzn.to\/373zkJ5\">six inch cakes<\/a> and then split each one into two. This made it much easier to make the four layers, as you only need two <a href=\"https:\/\/amzn.to\/373zkJ5\">six inch tins<\/a>.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Just like my <a href=\"https:\/\/www.janespatisserie.com\/2021\/11\/03\/my-blogs-7th-birthday\/\">7th blog birthday cake<\/a>, or the top layer of my <a href=\"https:\/\/www.janespatisserie.com\/2020\/10\/14\/two-tier-celebration-cake\/\">two-tier celebration cake<\/a>, I love these tins. Make sure to line the base of the tin as they are not loose bottomed &#8211; and enjoy! I used a basic american buttercream frosting, flavoured with <a href=\"https:\/\/amzn.to\/31CRz77\">peppermint<\/a>. I wanted to use this style buttercream because it is so easy to make &#8211; and it is sturdy. As long as you use the correct ingredients!&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">For buttercream like this, you MUST use block unsalted butter. Never ever use a baking spread, or a margarine when making buttercream &#8211; you want to make sure that you leave the butter to become room temperature before using, and it is worth the wait! You really want the butter to beat for so long to make it smooth, supple and make it perfect for the next stage. If your butter is too cold, you will need to beat for a lot longer to get to that smooth texture.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I then used icing sugar, and <a href=\"https:\/\/amzn.to\/31CRz77\">peppermint extract<\/a> to create the frosting flavour for my chocolate peppermint cake. It\u2019s at this stage, you really need to beat again for about another 5 minutes. This timing really naturally lightens the colour of the buttercream to make it whiter &#8211; but you can also add in some <a href=\"https:\/\/amzn.to\/3g8k2tc\">white food colouring<\/a> if you fancy.&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-19496\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/PeppermintCake5-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/PeppermintCake5-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/PeppermintCake5-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-19497\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/PeppermintCake6-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/PeppermintCake6-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/PeppermintCake6-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Colour and decoration<\/h3>\n<p><span style=\"font-weight: 400;\">So once you have split the cakes into the individual layers, and your white buttercream is prepped &#8211; you can decorate! I used a <a href=\"https:\/\/amzn.to\/3jp34oN\">large piping bag<\/a>, with a <a href=\"https:\/\/www.icedjemsshop.com\/shop\/jumbo-round-piping-tip\/?ref=13\">jumbo round piping tip<\/a> in. Before you add the frosting, you want to carefully brush some <a href=\"https:\/\/amzn.to\/3xaLb1x\">red food colouring<\/a> up the sides of the inside of the <a href=\"https:\/\/amzn.to\/3jp34oN\">piping bag<\/a>.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This may sound weird to brush some unmixed food colouring up the sides of a piping bag, but you really need so little &#8211; and it may look weird inside the bag too, but at the end of the day &#8211; you just need to trust the process! Add the frosting into the bag and you are ready to decorate you chocolate peppermint cake.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pipe little \u2018poops\u2019 of buttercream onto each layer, to create a beautiful cake like in the photos. I then put some extra buttercream on top, some <a href=\"https:\/\/www.icedjemsshop.com\/shop\/small-pink-red-white-mix-chocoballs\/?ref=13\">cute round sprinkles<\/a>, some <a href=\"https:\/\/www.icedjemsshop.com\/shop\/candy-cane-mix\/?ref=13\">smaller sprinkles<\/a> and some candy canes as a topper! Easy, cute and utterly delicious. Enjoy! and light brown soft sugar to a bowl, and beat until light and fluffy.<\/span><\/div><\/li><li id=\"wprm-recipe-19536-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add in the self raising flour, cocoa powder, eggs and peppermint extract and beat again until a lovely smooth cake mixture is formed.<\/span><\/div><\/li><li id=\"wprm-recipe-19536-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Split evenly between the two tins and bake in the oven for 35-45 minutes (or until a skewer comes out clean!)<\/span><\/div><\/li><li id=\"wprm-recipe-19536-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once baked, leave to cool in the tin for 10 minutes, and then leave to cool fully on a wire rack.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Buttercream<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-19536-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Beat the unsalted butter on its own for a while in your mixer until its smooth and supple.<\/span><\/div><\/li><li id=\"wprm-recipe-19536-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add in your icing sugar a little at a time and beat fully until its light and fluffy and add the peppermint extract!<\/span><\/div><\/li><li id=\"wprm-recipe-19536-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">(If the mixture is really stiff, add in 1-2tbsp of boiling water and beat fully to smooth out)<\/span><\/div><\/li><li id=\"wprm-recipe-19536-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add a jumbo round piping tip to a large piping bag, and carefully brush a small amount of buttercream up the sides of the piping bag in stripes. I use a 5mm brush, and do four stripes. <\/span><\/div><\/li><li id=\"wprm-recipe-19536-step-1-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add the buttercream to the piping bag. <\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Decoration<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-19536-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Level the cakes off if necessary. Split the two cakes into two so you have four layers in total<\/span><\/div><\/li><li id=\"wprm-recipe-19536-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add your first cake to a cake board or flat serving plate and secure with a small amount of buttercream.<\/span><\/div><\/li><li id=\"wprm-recipe-19536-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Pipe round of buttercream onto the first layer, add the second layer, and repeat with the buttercream. Repeat with all layers. <\/span><\/div><\/li><li id=\"wprm-recipe-19536-step-2-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">On the final layer, add some extra buttercream, and add some sprinkles and candy canes. <\/span><\/div><\/li><\/ul><\/div><\/div>\n\t<div id=\"recipe-video\"><\/div>\n\t<div id=\"recipe-19536-notes\" class=\"wprm-recipe-notes-container wprm-block-text-light\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-normal wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><ul>\n<li>This cake will last 3-4 days once made, at room temp.\u00a0<\/li>\n<li>The flavouring can be swapped for any flavour you fancy, and the decoration is completely optional.\u00a0<\/li>\n<li>If you want to make an 8\" cake, use a 500g mix (400g flour\/100g cocoa) and bake for 50-60 minutes.
