However, probably the main one?! Mint. I don\u2019t know why, considering my obsession with chocolate orange, I am fully into the mint game!&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This year, I wanted to do a bit of a showstopper cheesecake\u2026 A CANDY CANE CHEESECAKE!! Yesss, that\u2019s right! I just couldn\u2019t resist posting something I utterly love and adore\u2026 a candy cane cheesecake!!&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-19479\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake1-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake1-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake1-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Candy cane cheesecake<\/h3>\n<p><span style=\"font-weight: 400;\">This beauty of a recipe is a combination of many things such as a chocolate biscuit base, a mint cheesecake filling, a chocolate ganache topping, whipped peppermint cream, and some candy canes! It\u2019s a bit OTT, but utterly worth every gram of ingredients.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I was trying to work out whether to do a chocolate cheesecake filling, and you definitely can if you want &#8211; feel free to add 200-300g melted and cooled chocolate, by folding into the cheesecake mixture.&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-19488\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake10-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake10-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake10-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<p><span style=\"font-weight: 400;\">I didn\u2019t put chocolate into the mix for this one as my <a href=\"https:\/\/www.janespatisserie.com\/2017\/07\/10\/after-eight-cheesecake\/\">After Eight cheesecake<\/a> is a marriage of chocolate cheesecake and mint cheesecake swirled together, so for this one I just stuck with mint. I used a delicious <a href=\"https:\/\/amzn.to\/31CRz77\">peppermint extract<\/a>, as it\u2019s the easiest way to get a delightful flavour.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">As an option, you could fold through some candy cane pieces &#8211; the issue with this is that they are very solid pieces of sugar, so it would be a little crunchy! However, if you don\u2019t mind the crunch, it would be amazing! I am not joking in this, I am not saying it because whatever\u2026 I am saying it because it is vitally important! The best start is to use full-fat soft cream cheese, whether that is Philadelphia which is a classic cheesecake flavour, or mascarpone which is naturally sweeter.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Using double cream (heavy cream in other countries) is very important as it\u2019s the fattiest liquid cream there is. You can whip the cream into the cheesecake mixture as I do, or you can whip the cream separately and fold it into the cheesecake mixture. It is completely up to you! If you have an <a href=\"https:\/\/amzn.to\/37vtXlr\">electric whisk<\/a>, then you can do either &#8211; without, you may want to whip the cream separately to make sure the mixture stays stiff.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I sweeten my cheesecake mixture with icing sugar, but you can use caster sugar. I just find that if you use caster sugar, you may be left with a grainy texture &#8211; and then also the peppermint extract I used earlier! Four ingredients and you have a delightful cheesecake filling.&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-19482\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake4-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake4-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake4-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-19486\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake8-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake8-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake8-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Ganache<\/h3>\n<p><span style=\"font-weight: 400;\">I decided to use a ganache topping and decoration for my candy cane cheesecake because I haven\u2019t done this in a while &#8211; I\u2019ve done this before with my <a href=\"https:\/\/www.janespatisserie.com\/2016\/03\/18\/no-bake-creme-egg-cheesecake\/\">creme egg cheesecake<\/a>, and my <a href=\"https:\/\/www.janespatisserie.com\/2018\/07\/30\/twix-cheesecake\/\">twix cheesecake<\/a> &#8211; and it is just so delicious!!&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I used the same milk and dark chocolate ganache style as on my <a href=\"https:\/\/www.janespatisserie.com\/2020\/03\/14\/mini-egg-drip-cake\/\">mini egg drip cake<\/a> because I adore it. You can of course just do a drizzle of chocolate like on most of my other cheesecakes &#8211; such as my <a href=\"https:\/\/www.janespatisserie.com\/2019\/09\/25\/galaxy-cheesecake\/\">galaxy cheesecak<\/a>e, <a href=\"https:\/\/www.janespatisserie.com\/2019\/04\/27\/lindt-chocolate-cheesecake\/\">lindt chocolate cheesecake<\/a>, or even my <a href=\"https:\/\/www.janespatisserie.com\/2015\/05\/17\/no-bake-chocolate-orange-cheesecake\/\">terry\u2019s chocolate orange cheesecake<\/a>.&nbsp;<\/span><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-19483\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake5-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake5-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake5-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-19484\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake6-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake6-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/12\/CandyCaneCheesecake6-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Decoration<\/h3>\n<p><span style=\"font-weight: 400;\">Topping the cheesecake with some homemade whipped cream (just double cream and icing sugar whipped together) and piped on with my usual favourite piping tip &#8211; you can definitely leave this off if you don\u2019t like whipped cream, but don\u2019t cheat and use canned squirty cream because it deflates really quickly!&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">You can use mini candy canes, or whole candy canes &#8211; or even chop up whatever!! You basically need something candy cane themed to make sure this is a candy cane cheesecake, but you do you and use what you like! I hope you love this cheesecake. Enjoy! class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add the melted butter, and mix to a wet sand texture - press into the bottom of a deep 8&quot;\/20cm deep springform cake tin. <\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Cheesecake filling<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-19525-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add the full-fat soft cream cheese to a large bowl, and add the icing sugar and the peppermint extract. <\/span><\/div><\/li><li id=\"wprm-recipe-19525-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Whisk the mixture together until smooth. <\/span><\/div><\/li><li id=\"wprm-recipe-19525-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Pour in the double cream and whisk the mixture together until thick - or, you can whip the cream to firm peaks in a separate bowl, and then fold the two mixtures together. <\/span><\/div><\/li><li id=\"wprm-recipe-19525-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Spread the cheesecake mixture onto the biscuit base, making sure to pack it into the sides of the tin to prevent air gaps. <\/span><\/div><\/li><li id=\"wprm-recipe-19525-step-1-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Set the cheesecake in the fridge for a minimum of 6 hours, but preferably overnight. <\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 5px;\"><span style=\"display: block;\">Add the milk chocolate, dark chocolate and double cream to a jug\/bowl and heat in the microwave on a low heat until smooth.
