Biscuit truffles are one of the easiest things you can make as it takes so few ingredients, and it&#8217;s hard to get them wrong!&nbsp;<\/p>\n<p>I have been craving biscoff pretty much every day of my life since I found out it existed and I am alright about that&#8230; it is utterly delicious and I always want to develop something else with it that I know I am going to love. I already have a biscoff recipe for&nbsp;<a href=\"https:\/\/www.janespatisserie.com\/2015\/05\/01\/no-bake-speculoos-cookie-butter-cheesecake\/\">cheesecake<\/a>,<a href=\"https:\/\/www.janespatisserie.com\/2016\/08\/11\/biscoff-rocky-road\/\"> rocky road<\/a> and <a href=\"https:\/\/www.janespatisserie.com\/2015\/07\/18\/cookie-butter-brownies\/\">brownies<\/a>&#8230;. its now time for truffles!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-18040\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/06\/biscofftruffles1-2.jpg\" alt=\"\" width=\"600\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/06\/biscofftruffles1-2.jpg 600w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/06\/biscofftruffles1-2-225x300.jpg 225w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<h3>Biscoff mixture<\/h3>\n<p>I have made these countless times myself but it was my friends birthday recently and she made a request, so I used it as an excuse to make them again and thought I may as well post it on my blog this time, because you guys want them too.&nbsp;<\/p>\n<p>For the biscoff truffle mixture you want to use the biscoff biscuits crushed into a fine crumb, and then mixed with soft cream cheese. I find using a food processor much easier than anything else as it blends the biscuits to a fine crumb, and then also mixes in the cream cheese.&nbsp;<\/p>\n<p>If you prefer things a little sweeter, you can add in a bit of icing sugar so bring that sweetness up, but that is entirely optional. It&#8217;s super easy to roll them into a ball shape, and then I freeze them to solidify them for quickness!&nbsp;<\/p>\n<p>Once they&#8217;ve frozen I carefully melt the white chocolate until smooth, in the microwave, and then make sure my biscoff is runny for the drizzle (with a spare two biscuits worth of crumbs for the decoration!).&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-18044\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/06\/biscofftruffles6-2.jpg\" alt=\"\" width=\"600\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/06\/biscofftruffles6-2.jpg 600w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/06\/biscofftruffles6-2-225x300.jpg 225w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-18045\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/06\/biscofftruffles7-2.jpg\" alt=\"\" width=\"600\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/06\/biscofftruffles7-2.jpg 600w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/06\/biscofftruffles7-2-225x300.jpg 225w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<h3>Truffle coating<\/h3>\n<p>I dunk the truffles into the <a href=\"https:\/\/www.amazon.co.uk\/Callebaut-Select-White-Chocolate-Callets\/dp\/B01DDG8LJO\/ref=as_li_ss_tl?crid=3KL0NHR3ELSCI&amp;dchild=1&amp;keywords=callebaut+white+chocolate&amp;qid=1588689279&amp;sprefix=callebaut+w%2Caps%2C159&amp;sr=8-8&amp;linkCode=ll1&amp;tag=janespati04-21&amp;linkId=501dbbd2f5551137f5a897f003685b19&amp;language=en_GB\">white chocolate<\/a>, and place them carefully onto a lined tray. I think quickly drizzle over a little bit of melted Biscoff spread, and sprinkle on some biscuit crumbs!<\/p>\n<p><a href=\"https:\/\/amzn.to\/3pYIkX6\">I use this tool set when decorating my truffles<\/a> because I find it easier to lift the truffles in and out of the chocolate without getting too thick a coating, or covering myself in chocolate by accident!&nbsp;<\/p>\n<p>Repeat this process until all of your biscoff truffles have been coated, and leave them to set in the fridge for a couple of hours until the chocolate is solid. style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add the soft cream cheese to the rest of the biscuit crumbs and pulse in the food processor until the mixture combines into a thick paste, or mix together in the bowl. <\/span><\/div><\/li><li id=\"wprm-recipe-18048-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once mixed, portion the truffle mixtures using a melon baller, or two teaspoons for example and roll each truffle into a ball.<\/span><\/div><\/li><li id=\"wprm-recipe-18048-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Place the truffles on to a lined tray or plate and freeze for 30 minutes. <\/span><\/div><\/li><li id=\"wprm-recipe-18048-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once they have chilled, melt the white chocolate in a bowl until smooth. <\/span><\/div><\/li><li id=\"wprm-recipe-18048-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">In another really small bowl, melt the biscoff spread. Get the reserved biscoff crumbs from earlier ready too. <\/span><\/div><\/li><li id=\"wprm-recipe-18048-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Carefully dunk each truffle into the white chocolate and coat, and place onto a clean lined tray.
