It is based on the Wagamama white chocolate and ginger cheesecake!!&nbsp;<\/p>\n<p>I loveeee all things white chocolate, and I loveeeee all things ginger. These two flavours together are an absolute dream! I am not even kidding when I say the flavour combination is probably one of my favourites of all time!&nbsp;<\/p>\n<p>For the main idea of this cheesecake it was based on a mixture of my <a href=\"https:\/\/www.janespatisserie.com\/2020\/04\/18\/white-chocolate-biscoff-swirl-cheesecake\/\">no-bake white chocolate biscoff swirl cheesecake<\/a> (As biscoff biscuits and ginger biscuits are similar) and my <a href=\"https:\/\/www.janespatisserie.com\/2018\/02\/15\/white-chocolate-raspberry-cheesecake\/\">no-bake white chocolate raspberry cheesecake<\/a>!&nbsp;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17177\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/01\/IMG_6761-2.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/01\/IMG_6761-2.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2021\/01\/IMG_6761-2-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Base<\/h3>\n<p>I decided to use ginger nut biscuits as the base for my white chocolate and ginger cheesecake as they are available all year round, and utterly delicious.<\/p>\n<p>They make the perfect biscuit base for a cheesecake, especially in this case! That&#8217;s the basics for a lot of my cheesecakes (With the chocolate changing obviously) but otherwise &#8211; it&#8217;s that simple!&nbsp;<\/p>\n<p>I use full fat Philadelphia, but any full fat soft cream cheese works well. I use icing sugar, but you can use caster sugar!! I add my double cream in liquid and whip it as part of the mixture, but you can also whip the cream separately and fold it through!&nbsp;<\/p>\n<p><a href=\"https:\/\/www.amazon.co.uk\/Callebaut-Select-White-Chocolate-Callets\/dp\/B01DDG8LJO\/ref=as_li_ss_tl?crid=3KL0NHR3ELSCI&amp;dchild=1&amp;keywords=callebaut+white+chocolate&amp;qid=1588689279&amp;sprefix=callebaut+w%2Caps%2C159&amp;sr=8-8&amp;linkCode=ll1&amp;tag=janespati04-21&amp;linkId=501dbbd2f5551137f5a897f003685b19&amp;language=en_GB\">I use my favourite white chocolate as always<\/a> &#8211; but again, any work! I didn&#8217;t use much, maybe 4-5 chunks of it finely chopped, but you can use less, &nbsp;more, or none at all! You can use a small amount of ground ginger instead, or stem ginger too.<\/p>\n<p>For the decoration I did my usual drizzle of melted chocolate, swirls of whipped sweetened double cream, and then some crushed biscuits! It&#8217;s simple, but you can do whatever you want!!
