I have had so many requests for a Jammie Dodger cheesecake, and after my <a href=\"https:\/\/www.janespatisserie.com\/2020\/06\/20\/jammie-dodger-blondies\/\">Jammie Dodger Blondies<\/a>, I just had to do it!&nbsp;<\/p>\n<p>I love a Jammie dodger, and I 100% thing they are underrated because some people will pass them off for another biscuit. But lets think about&#8230; a deliciously buttery jam filled biscuit is hard to beat! They did for a while come in different flavours, but my favourite for sure is the original!<\/p>\n<h3>Base<\/h3>\n<p>For the base of this cheesecake, I decided to use Jammie Dodgers. Can you really have a Jammie Dodger cheesecake without using them for the base?! Probably, but it&#8217;s just not the same. For some recipes I get it, but for this sort of thing I just think it&#8217;s far too faffy to try and remove the jam! Just whack it all in and enjoy.&nbsp;<\/p>\n<h3>Filling<\/h3>\n<p>For the cheesecake filling, I decided not to put Jammie Dodgers through the mix because I did think that might go a little weird, but instead went for a vanilla base, with raspberry jam swirled through. You can use whatever jam you like however, but raspberry is the classic!<\/p>\n<h3>Jam<\/h3>\n<p>I use a thick jam as I think it has the best results, and some preserves can be a lot softer and make the mix a bit runny &#8211; so be careful. You only need to fold it through a few times to get the swirled effect!&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16177 aligncenter\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4935-3.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4935-3.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4935-3-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16172 aligncenter\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4908-3.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4908-3.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4908-3-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<h3>Chocolate&nbsp;<\/h3>\n<p>If you wanted, you could also add in some melted chocolate &#8211; I think <a href=\"https:\/\/www.amazon.co.uk\/Callebaut-Select-White-Chocolate-Callets\/dp\/B01DDG8LJO\/ref=as_li_ss_tl?crid=3KL0NHR3ELSCI&amp;dchild=1&amp;keywords=callebaut+white+chocolate&amp;qid=1588689279&amp;sprefix=callebaut+w%2Caps%2C159&amp;sr=8-8&amp;linkCode=ll1&amp;tag=janespati04-21&amp;linkId=501dbbd2f5551137f5a897f003685b19&amp;language=en_GB\">white chocolate<\/a> would be the best so you don&#8217;t lose the colouring or swirl effect &#8211; so use 200g of melted and cooled white chocolate, and fold it through the cream cheese\/icing sugar\/vanilla mix before adding in the cream.&nbsp;<\/p>\n<h3>Leave to set<\/h3>\n<p>The most painful part of making a cheesecake is having to wait for it to set. The reason I don&#8217;t generally recommend using the freezer, is because the cheesecake can begin to melt once thawed, or if you leave it in there too long it will obviously be far too frozen.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16171 aligncenter\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4915-3.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4915-3.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4915-3-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16176 aligncenter\" src=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4943-3.jpg\" alt=\"\" width=\"533\" height=\"800\" srcset=\"https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4943-3.jpg 533w, https:\/\/www.janespatisserie.com\/wp-content\/uploads\/2020\/08\/IMG_4943-3-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/p>\n<p>The freezer can make it easier to remove cheesecakes from the <a href=\"https:\/\/amzn.to\/3n5rALR\">tin<\/a> however, so if you are worried about that bit you can put the cheesecake in the freeze for 30-60 minutes or so to help you remove it, but make sure it doesn&#8217;t freeze too much!<\/p>\n<h3>Lining cheesecake tins<\/h3>\n<p>I don&#8217;t line my tins as I have made oodles and oodles of cheesecakes now with lots of practice, but you can 100% line your <a href=\"https:\/\/amzn.to\/3n5rALR\">cheesecake tins<\/a> if you want. The base, or the sides &#8211; or both! How could I possible resist adding in some more Jammie Dodgers?! I don&#039;t line my tins, but you can if you wish! <\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">For the Cheesecake Filling<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-16164-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add the cream cheese, icing sugar and vanilla to a bowl - mix until smooth. I do this with the whisk attachment! <\/span><\/div><\/li><li id=\"wprm-recipe-16164-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Pour in the liquid double cream, and whip again until thick. Alternatively, whip the cream separately and fold through the cream cheese mixture. <\/span><\/div><\/li><li id=\"wprm-recipe-16164-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add in the jam, and fold through a few times to create a swirled cheesecake mix. <\/span><\/div><\/li><li id=\"wprm-recipe-16164-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Spread this onto the jammie dodger base, making sure to pack the cheesecake mix into the sides of the tin to prevent any gaps!<\/span><\/div><\/li><li id=\"wprm-recipe-16164-step-1-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Set the cheesecake in the fridge for a minimum of 6 hours, but overnight is better!<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">For the Decoration<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-16164-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Remove the cheesecake from the tin carefully.
